Avocado Stuffed Eggs

Avocado Stuffed Eggs

Eating protein at every meal helps keep cravings away throughout the day. Add some healthy fat, and you’ve got a filling snack that provides so much nutrition. Did you know that an avocado has more potassium than a banana?

Deviled eggs are an entertaining favorite, but are often filled with extra fat and calories. We took away everything fancy and stripped this snack down to the basics – hard-boiled egg whites and mashed avocado – that’s it!

(Serves 1)

3 large eggs, boiled
½ medium-sized avocado, mashed
(we added garlic powder, pepper and a pinch of sea salt)

Cut your boiled eggs in half and remove the yolks. (You can keep the yolks if you want; we decided to remove them since we’re already getting the healthy fat from the avocado)

Egg Whites

Spoon mashed avocado into eggs, distributing evenly.
