Vegan Granola

Learn how to make vegan granola, a perfect breakfast or even a snack.

Recipe………………………….

Ingredients

½ cup of a syrup made with ½ cup brown sugar and ¼ cup hot water
5 cups rolled oats
½ cup sunflower seeds
½ cup nuts (optional, I use sliced almonds)
1 teaspoon cinnamon
1 teaspoon maple syrup
½ teaspoon salt
¼ cup canola oil
1 teaspoon vanilla and/or other extract
¾ cup raisins, chopped dates, chopped dried apples or apricots (optional, I never add this)

Process

1. Preheat oven to 325°F.
2. Heat the water in the microwave for 1 minute.
3. Add the brown sugar to the water to make the syrup.
4. Add the cinnamon, maple syrup, salt, canola oil and vanilla extract to the brown sugar mixture and set aside.
5. In a large bowl, mix all the dry ingredients together (oats, seeds, nuts) except for the dried fruit.
6. Add the liquid to the dry ingredients and mix thoroughly. The liquids will be absorbed and the granola will become darker and shinier.
7. Spread the granola in a shallow baking pan. You may want to line the pan with parchment paper. I use a silpat mat.
8. Bake at 325°F for 30 minutes, turning every 10 minutes to keep the bottom from browning. After 30 minutes, it should be fairly dry and starting to brown.
9. Remove the granola from the oven and allow it to cool for about 15 minutes.
10. Stir in the fruit, if you’re using it.
