Sweet potatoes and sweet apples are the perfect combination in this side dish that you’re going to want to eat as dessert. Freshly squeezed orange, lemon and apple juices and agave nectar make this recipe an absolute treat.
Pink Apple Juice: I make my own applesauce and don’t peel the apples first. I used the liquid that was left after the apples cooked as my apple juice in this recipe.
Other Tweaks: Decrease the baking time for the sweet potatoes. Slice the apples thinly so they cook a little more. In the final dish, the apples had a little crunch and the sweet potatoes were soft. Using a larger baking dish might also allow the syrup to cover more of the apples and potatoes. Despite the inconsistency in texture, I love this recipe!
