SWEET POTATO BOWL

Directions:
Preheat oven to 400 degrees. Use the tines of a fork to prick the potato all
over. Place potato on a small baking sheet to catch any drips. Place in oven and roast until a knife can easily pierce through the middle of the potato, about 45 minutes. Let potato cool to room temperature, about 30 minutes, or refrigerate until ready to use. Peel the sweet potato, cut into 1-inch pieces, and place in a medium bowl. Top with mango, bell pepper, avocado, and cilantro. Drizzle lime juice over top and toss gently to combine.

Ingredients:
1 large sweet potato
1 mango peeled and cut into 1” dice
1 red bell pepper, seeded and chopped
½ avocado, peeled, seeded, and cut into 1” dice
¼ cup cilantro, chopped
Juice of 1 lime

ROASTED PARMESAN TOMATOES

Directions:
Preheat oven to 425 degrees. Cover a baking pan or cookie sheet with parchment paper. Thickly slice the tomatoes and place them in a single layer on the prepared pan. In a small bowl, make a paste by combining the parmesan cheese, 2 tablespoons olive oil, and chopped oregano. Season paste with a few shakes of black pepper. Spread the paste evenly over each tomato. Bake for 15 minutes until the tops are golden brown and bubbling.

Ingredients:
2 beefsteak tomatoes, sliced (4½′′ thick slices on each tomato)
2 tablespoons fresh parmesan cheese, shredded
2 teaspoons oregano, fresh or dried
1 tablespoon olive oil
¼ teaspoon black pepper

ENERGY BITES

Directions:
In a medium-size bowl, combine almond meal, shredded coconut, agave nectar, and chia seeds. Mix well until blended. Form into balls, roll in cacao powder, and refrigerate until firm. Optional: top with coconut flake.

Ingredients:
⅓ cup almond meal (see note)
⅓ cup unsweetened shredded coconut
½ cup almond butter
¼ cup cacao powder
1 tablespoon chia seeds
1 tablespoon agave nectar
