Chicken breast can get really boring, really quick. Here are some skewers made with green peppers, mushrooms, and onions. Our simple marinade packs on the flavor with just a few ingredients.
What You’ll Need:
4 boneless, skinless chicken breast
2 green bell peppers, chopped
1 onion, chopped (keep pieces thick enough to hold up when skewered)
1 package of large white mushrooms, stems removed
12-15 metal or wooden skewers
Marinade:
Bragg’s Liquid Aminos
1 tbsp. garlic powder
1/2 tsp. ground ginger
Juice of 1 lime
Salt and pepper to taste
Directions:
Cut chicken breast pieces into even chunks. Add to marinade mixture of combined liquid aminos, garlic powder, ginger, lime, salt and pepper. Mix thoroughly. Cover and allow to marinate at least 30 minutes in refrigerator. (Can leave in fridge overnight if you have the time). If using wooden skewers, allow to soak in cold water for at least 30 minutes to prevent from burning on grill.
Assemble skewers using even amount of chicken, peppers, onions and mushrooms. Cook on hot grill for about 12 minutes total (or until cooked through completely) rotating a few times while cooking.
