Ditch the donuts and mcmuffins in the morning. These turkey, egg, and cheese cups pack lots of nutrition and taste. You can pop them in the oven while getting ready to head out the door!
What you’ll need:
Sliced deli turkey or ham, preferably with no preservatives
½ – 1 dozen eggs
Low-fat Shredded cheddar cheese
Chopped green onion
Sprinkle of salt and pepper
How to prepare:
Preheat oven to 375 degrees. Using a cupcake tin, spray each cup with non-stick cooking spray. Line cups with 2 slices of turkey (or ham). Then carefully crack an egg or put two egg whites into each cup on top of turkey, making sure no shell pieces are present. Add a pinch of salt and pepper to each cup. Top with a teaspoon of low fat shredded cheese, followed by green onion. Bake for about 15-20 minutes.
For any cups that are unused, fill about halfway with water to prevent burning.
½ dozen turkey cups = 3 servings (2 per person)
1 dozen turkey cups = 6 servings (2 per person)
